Rice Soup
Serves 3 or 4
3 cups water or stock
1/2 teaspoon salt
2 to 4 garlic cloves, pressed
1/2 cup raw white rice, well washed
2 teaspoons olive oil
Bring water, salt and garlic to boil. Add rice, cover, bring back to
boil, lower heat and
simmer 15 minutes, or until rice is tender. Drizzle oil over, cover and remove
from heat. Let stand 5 minutes without stirring before serving.
