Oriental Crab and Corn Bisque
Serves 8
8 cups Basic Chinese Chicken or Pork Broth
6 fresh mushrooms, sliced, or
6 dried forest mushrooms,softened and slivered
1 white onion, sliced
2 cups white cream-style corn
Sugar, soy sauce and black pepper to taste
1 to 1-1/2 cups flaked crab meat
2 eggs, beaten
Simmer stock, mushrooms and onion, covered, 30 minutes, adding corn
last 10 minutes. Adjust seasonings with sugar,soy and pepper and add
crab and reheat. Bring to slow boil, gradually
drizzle in eggs and stir with fork so eggs form long,slender strands.
