Salmon Loaf

2 (16 oz.) cans salmon
2 eggs
1 1/2 c. liquid (salmon liquid plus milk)
3 c. coarse cracker crumbs (soda crackers)
2 Tbsp. lemon juice
2 tsp. chopped onion
Salt and pepper to taste

Heat moderate oven (350°). Grease a loaf pan 9x5x3 inches. Flake salmon and remove bones and skin. Blend in eggs. Stir in remaining ingredients. Spoon lightly into pan. Bake 45 minutes. Garnish with lemon wedges. Makes 8 servings.
