Quiche Lorraine


1 9" deep dish frozen, or fresh, pie crust
12 slices (approximately 1/2 lb.) bacon or a combination of bacon and ham
1 cup shredded Swiss cheese (or 2/3 cup Swiss cheese, 1/3 cup gruyere cheese)
4 eggs
1/3 cup minced onion
2 cups light cream (2 small containers)
Salt, pepper, & nutmeg

Preheat oven to 425°. Defrost the pie shell (if frozen). Brown bacon, drain on paper towels, and break into small pieces. Put bacon (and/or ham) into bottom of pie crust with onion and cheeses. Beat eggs and light cream together with wire whisk adding salt & pepper to taste. Pour into pie shell, sprinkle with nutmeg. Bake 15 minutes.

Reduce oven to 300° and bake 30 additional minutes, or until knife inserted 1"
from edge comes out clean.

Let stand 10 minutes before cutting.

NOTE: You may add vegetables such as broccoli, some different cheeses for a different
flavor, seafood, etc.
