Pepper Steak

1 lb. round steak
1 Tbsp. paprika
2 Tbsp. butter
2 cloves garlic, crushed
1 1/2 c. beef broth
1 c. green onions (tops, too)
2 green peppers, cut in strips
2 Tbsp. cornstarch
1/4 c. soy sauce
1/4 c. water
2 tomatoes or 1 can tomatoes

Cut steak (pound first) in 1/4 inch strips. Sprinkle with paprika and let stand a few minutes. Brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes. Stir in onions and green peppers. Cover and cook 5 more minutes. Blend cornstarch, water and soy sauce. Cook until thickened. Add tomatoes. Heat 5 more minutes. Serve over rice. (I cook mine in the oven after I brown the meat.)
