Company Chicken

8 chicken breasts

Flour and fry as for fried chicken. When brown, remove and drain. Pour off excess oil and saute:

1 large onion
1 green pepper
1/2 c. celery (optional)

When these are soft, add 1 can water chestnuts sliced thin. Cover chicken in water and then seasoning until are tender. Add 1/2 cup cooking sherry or wine and simmer 15 minutes longer. Remove chicken and dry under flame. Thicken sauce and serve over rice. Serves 4- 6.
