Chicken Parmesan

1 – 1 1/2 cup dry bread crumbs
1/2 teaspoon salt
6 chicken breasts, boned and skinned
1/2 teaspoon minced onion
1 cup grated parmesan cheese
2 tablespoons margarine
1 cup chopped onion
1 package mozzarella cheese, grated
2 tablespoons oil
1/4 teaspoon pepper
2 slightly beaten eggs
1/2 teaspoon thyme
1 clove garlic
1/2 teaspoon basil
1 pound canned tomatoes
2 8-ounce cans tomato sauce

Put crumbs and first 1/2 cup parmesan cheese in deep bowl. 2 eggs in another bowl. Dip chicken in slightly beaten eggs then crumbs to coat completely. Set aside.

Sauce: In sauce pan add onion, garlic, softened margarine, tomatoes, tomato sauce, basil, thyme, salt and pepper together. Cover and simmer 15 minutes.

Heat oil in skillet, brown chicken until light brown on both sides.

Place a few spoonfuls of sauce mixture in a large baking dish. (enough to cover bottom of dish) Place chicken on top of sauce. Cover with rest of sauce, mozzarella cheese and second 1/2 cup grated parmesan. Bake 350 degrees for 20 minutes.
