Fresh Strawberry Tarts
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
2 Tbsp. lemon juice
2 tsp. grated lemon rind
2 Tbsp. cream or milk
8 baked tart shells
Fresh strawberries
Mix the cream cheese, lemon juice, rind, cream or milk until of whipped cream
consistency. (Leave the cheese out of the refrigerator several hours - it works
better.) Line tart shells with the cheese mixture, fill with fresh strawberries
and cover with glaze.
Strawberry Glaze
3 c. strawberries
1 c. sugar
1 Tbsp. cornstarch
Mash strawberries with the sugar and let stand 30 minutes. Mix with the cornstarch
and cook until thick and clear. Cool. Pour over berries in tarts and chill.
Top with whipped cream.
