2 1/2 c. sugar
1/2 c. boiling water
Flavoring
1/2 c. corn syrup
2 egg whites
1 c. walnuts or pecans
Combine the sugar, corn syrup and water in a saucepan and bring to a
boil. Cook to 240° by candy thermometer, or until mixture forms firm ball. Beat
egg whites until stiff. Pour 1 cup of the syrup mixture over the egg whites,
beating constantly. Cook the remaining syrup until it reaches hard ball stage
or 265°. Add it to the first mixture and beat until it holds its shape
when dropped from a spoon. Add nuts and flavoring and drop on wax paper or
spread in buttered pan.
