Cheesecake Mini's

15 Vanilla Wafers
16 ounces cream cheese softened
3/4 cup sugar
2 eggs
1 teaspoon lemon juice
1 teaspoon vanilla
1 can cherry pie filling (21oz)
Paper or foil muffin liners
Place a wafer in the bottom of each liner in a muffin tin. Blend cream cheese and sugar together. Add eggs, lemon juice, and vanilla.

Beat until smooth. Fill liners 2/3 full. Bake at 350 for about 15-18 minutes, or until set. Cool. Remove from pan. Top with fruit filling, store in refrigerator until serving time.
