Buttermilk Pie


1 stick butter
2 cup granulated sugar
3 eggs
3 rounded tablespoons flour
1 cup buttermilk
1 dash nutmeg
1 teaspoon vanilla
1 9" pie shell

Soften butter. Add: 2 cups sugar, mix well, then add eggs and flour. Mix well on high speed. On medium speed add nutmeg, vanilla, and buttermilk. The batter should have the consistency of corn meal mix (not too thin not too thick). If too thin, add a little more flour. Pour into unbaked pie shell and bake at 350 for 45-55 minutes. Turn pie around half way into baking cycle. Pie should be golden brown on top and not sloshy. Insert a toothpick in center, if it comes out clean it's done. Let pie cool to room temperature. Cut your pie pieces smaller than usual - this is rich stuff. Store unused pie in refrigerator - it is good cold.
