Zucchini Bread
Beat together:
3 eggs
2 cups sugar
1 cup cooking oil
Add:
3 teaspoons vanilla
2 cups ground zucchini (unpeeled and drained)
Sift together:
3 cups flour
1 teaspoon salt
3 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
Add to above mixture along with 1 cup chopped nuts. Bake in 2 greased
loaf pans for 1 hour at 325°.
