Plucking Bread 6 c. sifted flour Measure out 3 cups flour and resift with sugar and salt. Set remaining flour aside. Heat milk until film shines over top. Remove from fire and cool to lukewarm. Measure 1/2 cup milk and stir in with yeast. Stir slightly to beaten eggs and melted butter into remaining milk. Combine egg mixture with yeast and sifted flour - sugar combination. Stir well (looks like thick soup). Cover with clean towel and let stand in warm place 1 1/2 or 2 hours until double in size. Stir in remaining flour with spoon. Cover and refrigerate overnight. Grease a large tube angel food cake pan. Turn Basic Sweet Dough out on floured board and form into balls about the size of ping pong balls. Dip each ball into melted butter (l or 1 1/2 sticks) and a cinnamon -sugar combination (4 tablespoons cinnamon and 20 tablespoons sugar). Form a single layer in the bottom of pan - cover with pecans. Repeat until 3 layers are formed. Let rise in warm place until double in size or mixture reaches top of pan (usually 1 1/2 or 2 hours). Bake at 350 for 50-60 minutes. Let cool a while and remove from pan. (Put top down - top has crust and it will remain taller this way.) Serve by plucking yourself a piece! |
