Pecan Bran Muffins

1 1/4 c. whole wheat flour
1 tbsp. baking powder
1/2 c. sugar
1 1/2 c. All Bran
1 1/4 c. low fat milk - 1/2%
1/4 c. safflower oil
1/2 c. chopped pecans
1 c. raisins (or dates)
2 egg whites
1 tsp. vanilla
1 banana


1. Stir together flour, baking powder, sugar, chopped pecans, chopped raisins. Set aside.
2. Measure All Bran and milk into large mixing bowl. Stir to combine. Let stand 2 minutes to soften cereal. Add oil, egg whites, vanilla, sliced banana. Beat well.
3. Add flour and other ingredients. Stir only until combined. Portion batter into 18, 2 1/2 inch muffin pan cups. (Spray cups with Pam.)
4. Bake at 400 degrees F. for 18 minutes. Yield 18 muffins.
