Cranberry Nut Bread


2 cups all purpose flour
1 cup granulated sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup butter or margarine melted
3/4 cup orange juice
1 egg
1 teaspoon grated orange rind
1 cup coarsely chopped cranberries
1/2 cup chopped pecans (or walnuts)

Grease 9"x5" pan. Preheat oven to 350°. In a mixer bowl combine flour, sugar, salt, baking powder and baking soda. Stir in butter.

Combine the juice, egg, and peel. Add to the dry ingredients -- mix to moisten. Fold in berries and nuts.

Bake at 350° for about 60 minutes. Cool slightly. Remove from pan and cool completely. Wrap and store in refrigerator until cold.
