Hot Water Corn Bread
Mix meal, sugar and salt together in bowl. Stir in boiling water to make a thick dough. If not thick, add a little more meal. Stir in egg. Drop by heaped serving spoons into 1/3 inch hot oil in skillet and fry on medium heat until golden brown on both sides. Should be crispy/crunchy. Drain on paper towels and serve while hot/warm. Good with turnips and greens. Makes 8-10 fritters. |
