Hot Water Corn Bread


1 cup cornmeal
1/2 teaspoon salt (ONLY IF using plain meal)
3/4 cup boiling water
2 tablespoons sugar (or a tiny bit of artificial sweetener)
1 egg

Mix meal, sugar and salt together in bowl. Stir in boiling water to make a thick dough. If not thick, add a little more meal. Stir in egg. Drop by heaped serving spoons into 1/3 inch hot oil in skillet and fry on medium heat until golden brown on both sides. Should be crispy/crunchy. Drain on paper towels and serve while hot/warm. Good with turnips and greens. Makes 8-10 fritters.
