Corn Bread


2 cups buttermilk
1 egg
1 teaspoon baking powder
2 cups cornmeal
1/2 teaspoon soda
4 or 5 tablespoons oil
1/2 teaspoon salt

In a mixing bowl, combine buttermilk, baking powder, soda, salt and egg. Beat well and add cornmeal; stir until well mixed. Pour oil into 10-inch skillet and heat in hot oven until very hot and swirl to coat skillet. Then spoon hot oil into cornmeal mixture and stir well. Pour batter into hot skillet and bake and 425, 20 to 30 minutes or until golden brown.
