Bran Muffins


2 Tbsp. cooking oil
1 egg
1 c. bran (All-Bran, 40%Bran or Raisin Bran)
3 Tbsp. sugar
3/4 c. milk
1 c. flour
1/2 tsp. salt
3 tsp. baking powder

Measure the bran, flour, sugar, salt and baking powder into a mixing bowl. Mix with hands. Make a well in the center. Add milk, oil and whole egg, which will mix with the oil and milk, and then stir the whole mixture together. Drop a well rounded and heaped teaspoon into each cup of a well greased, hot muffin pan and bake at 425 for 15 to 20 minutes. Makes about 10 or 12 average sized muffins.
