Banana Muffins

3 tbsp. brown sugar
1 tbsp. dairy sour cream
3 sm. bananas
1/2 c. granulated sugar
1 1/2 c. packaged pancake mix
1/3 c. pecans (ground)
A slightly beaten egg
1/4 c. cooking oil

In a small bowl, mix brown sugar and sour cream. Stir in pecans and set aside. Mash bananas in another bowl.

In a medium size bowl stir together egg, granulated sugar, oil and mashed bananas. Blend well and add pancake mix, stirring until moistened. Grease or line muffin tins with baking cups. Fill 2 3 full. Put 1 teaspoon pecan mixture atop each muffin. Press slightly into batter. Bake at 400 degrees for 12 to 15 minutes or until golden brown. Makes 12 muffins.
