Banana Bread


1/2 cup shortening
1 cup sugar
2 eggs
2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe mashed bananas
1 cup nuts
1 tablespoon vanilla

Cream sugar and shortening; add eggs, one at a time, beating well after each addition. Sift dry ingredients onto wax paper. Stir into creamed mixture, quickly, just until blended. Stir in mashed bananas, nuts, and vanilla. Put in loaf pan and bake 1 hour at 350° or until toothpick comes out clean.
