Red Relish

5 lb. red sweet peppers
3 3/4 lb. mild white onions, peeled and cut in small sections

Grind peppers and onions together. Mix well, juice and all. Cover with boiling water and let stand 5 minutes. Drain off and as much water as possible, then squeeze dry. To this add:

1 qt. vinegar
3 Tbsp. salt
2 c. white sugar

Bring to a boil and cook 20 minutes. Seal in sterilized jars.
