Potatoes O’Brien

2 Tbsp. butter
1/2 green pepper, chopped
1/2 small onion, chopped
1 c. grated American cheese or Velveeta
Salt and pepper
2 Tbsp. flour
1 1/2 c. milk
1 pimiento chopped
4 medium size boiled potatoes

Melt butter, stir in flour; add milk. Cook 2 minutes, add cheese, stir until cheese is melted, season to taste. Add onion, green pepper and pimiento. Place a layer of diced potatoes in a buttered baking dish, then a layer of sauce, repeating alternately, with sauce on top. Bake 20 minutes in a moderate oven (350°).
