Green Bean – Swiss Cheese Casserole
2 Tbsp. margarine
2 Tbsp. flour
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper
1/2 c. milk
1/2 tsp. grated onion
1 c. sour cream
2 cans drained hot green beans
1 1/2 c. shredded Swiss cheese or Cheddar
Topping: 3/4 cup corn flakes, crushed, mixed with 2 tablespoons melted
margarine.
Melt butter in small pan. Add flour, salt, pepper and sugar; blend well. Add
1/2 cup milk; blend. Cook 1 minute, remove from heat, stir in grated onion
and sour cream. Blend again. Add hot beans. Spread 1/2 of this mixture in buttered
casserole. Add a layer of shredded cheese, then remainder of beans, top with
remaining cheese. Top with corn flake mixture. Bake 20 minutes at 400. Serves
6 or 8.
Note: For 10 or 12 servings, use 3 cans of beans plus 1 1/2 of the ingredients.
